Meet The Working Boat’s Pub Manager Harry Evison…

With years of experience in hospitality – from running his own pub to managing teams across the South West – our Pub Manager Harry Evison brings passion, energy and a genuine love of great pub culture to The Working Boat.

We caught up with him to chat about his journey to Cornwall, what makes the pub so special, and why it’s such a firm favourite with locals and guests alike.



How did your journey in hospitality begin, and what led you to The Working Boat?

I started out at Wetherspoons when I was 18 and worked my way up to manager by 21. I then spent 17 years in Dorset in a variety of roles, including running my own pub and business, which was a fantastic experience.

Last summer, my partner and I decided to make the move to Cornwall for a new chapter — and that’s how I found myself at The Working Boat.


What do you love most about working here, and what keeps you inspired day to day?

The setting is just beautiful — it’s such a lovely place to come to work every day. I really enjoy the challenge of running a busy pub that’s part of a hotel, too. There’s always something new happening, which definitely keeps things interesting.


What does a typical day look like for you as manager of The Working Boat?

Every day is different! Mornings are usually spent organising and tackling admin, making sure everything is set up and ready for service. I catch up with the team, make sure everyone’s happy and in the right place to perform at their best — then it’s all about delivering a great service once we open.


Why do you think the pub is so popular with locals?

The location plays a big part — being right on the harbour is hard to beat. We’ve worked really hard to create a welcoming atmosphere, with a great mix of hotel guests and locals. It’s a really social space with plenty going on, which people seem to love.


For guests staying at The Greenbank, how would you describe The Working Boat as part of their experience?

It offers a slightly more relaxed pace compared to upstairs, with a laid-back pub vibe and plenty of personality. Our theme nights are always great fun and give guests a real taste of Cornwall — it’s a nice change of scene while still feeling part of the overall experience.



If it’s someone’s first visit, which dish or drink would you always recommend they try – and why?

I’d always suggest the local seafood, especially the catch of the day — it’s fresh, seasonal and really showcases what our chefs can do. I’d also recommend timing your visit with one of our theme nights, as they’re a brilliant way to experience something a little different.


Food is a big part of the experience here. Can you tell us about the weekly specials, and do you have a personal favourite?

Our catch of the day changes regularly depending on what’s available, which keeps things exciting. It’s always great quality and gives the chefs a chance to be creative with different types of fish. It’s definitely a favourite of mine for that reason.


If a guest asked you what they absolutely shouldn’t miss on their first visit to Falmouth, what would you point them towards?

I’d say just take a walk and have a proper explore. There are so many different spots to discover in Falmouth — from the harbour and beaches to the independent shops and cafés — it’s best enjoyed at your own pace.


The pub is known for its relaxed, lively atmosphere. How do events like open mic night and the weekly charity quiz contribute to that sense of community?

They’re both great midweek fixtures, especially when there’s not as much happening elsewhere in town. The quiz is growing in popularity and raises money for charity, which really resonates with people. Open mic night gives local musicians a chance to showcase their talent, and it always makes for brilliant entertainment.


Are there any events coming up at The Working Boat this summer you’re particularly excited about?

Sea Shanty Festival is always a highlight — it’s such a fun, lively time in Falmouth. The Dragon Boat Race is another big one that everyone really looks forward to. There’s always a fantastic atmosphere around both events.
